Just winding down from the afternoon OVFC board meeting (budget). It actually wasn't too bad and we even accomplished some things. That's something that doesn't happen very often.
Growing up I hated pork. It came from the grocery store and Mom was from the 'cook it till it's grey' school of pork cooking. Now that I'm married to my pork producer husband I've discovered that farm-fresh pork is delicious. It tastes nothing like the stuff at the grocery store! I actually enjoy making and eating pork. Also, remember that most pork can be eaten with a hint of pink (or 165F). This pork dish is actually one that I was happy to find in the oven.
BBQ Pork Ribs
serves 6
3lb ribs 1 clove garlic, minced
1/2 c vinegar 2 c ketchup
2 c water 2 T Worcestershire sauce
1/2 c brown sugar 1 onion, chopped
2 t salt 1/2 t pepper
2 T butter
Mix the sauce ingredients. Cut the ribs into serving size portions. Pour everything into a roasting pan or large casserole dish.
Bake 350F for 2 hours, stir after the first hour. This also turns out well in a crockpot on low for 8 hours.
Honey Garlic Legs
1 T oil 1 onion, finely chopped
3/4 c honey 1/4 c lemon juice
1/4 c soy sauce 2 T ketchup
4 lbs chicken drummies 6 cloves garlic, chopped
Boil sauce for 5 minutes. Pour everything into a 9x13 inch pan. Bake 375F for 30 minutes, turning at least once.

OK- Here is my want list: I want to live in the country (rurally)- so that I can raise a pig, a steer, some chickens for eggs and the oven and have space for a garden that will feed this family through the year (via canning and freezing)- That's not wanting much is it?
Oh I should add that Emma would add a rabbit to our farm (but not for eating) and Miss Nattie would have a horse- the boys would want a tractor, any brand. Oh, us city folk, romanticising farm life- the grass MUST be greener... syndrome.
It's not too much to ask. But just to burst your bubble a little. It really is cheaper (and easier) to find a real farmer to buy your meat from. Unless you have the land to grow their food, raising your own costs so much. Feed is much more expensive by the bag (from the feed store) than by the tonne or from the fields. Also, don't forget you will be tied to the house, no more family vacations. Animals are a lot more work than people think. I also don't think the girlies would like when it was 'that time'. It's hard not to get attached when there's only a few animals.
